I can tolerate it (barely) when a place offers "ranch or blue cheese" with something "Buffalo" - but so many places just say "with Ranch" and look at you like you have done unspeakable acts to a close family member if you enquire as to the availability of the correct sauce. And correct sauce is only part of it. Wings are greasy, fatty rich. You need the right compliment to it. The strong, tangy, slightly funky flavors of bleu cheese mesh with the fatty texture and heat of the sauce. Ranch is sweet, thin, mild and cloying, and it dumbs down what makes a Buffalo wing a Buffalo wing. Like Eleven said, it’s no different than ketchup on a steak. Depending on where you are in the Philly suburbs, The Whip Tavern has the best wings (and weck!!) I found in the Philly area, although I haven't been there in a bit. Both were Buffalo-OK, which makes them worlds better than anything else in the area.
