Chicken Tacos:

  • Chicken Breasts
  • Tortillas
  • Limes
  • Onions
  • Cilantro
  • Salsas / Hot Sauces
  • Peanut/Vegetable/Canola Oil

 

  1. Fill a pot with water and heat to a gentle simmer (OPTIONAL: throw in garlic, onions, celery, or whatever )
  2. Add chicken breasts and gently poach them until the internal temperature hits 140ish degrees.
  3. Remove and let cool. Save the liquid for broth - you can cook rice or beans in it if you wish.
  4. Shred chicken with a fork and mix with salt, and some of the diced onions and cilantro.
  5. If you have a cast iron pot put that on the stove or grill and get it ripping hot. Add a few glugs of oil, let it heat up and then, working in batches as to not overcrowd the pan, fry the dickens out of that chicken. You'll know it's done when it starts to look nice and crispy. 
  6. Continue frying in batches, adding more oil if it starts to dry out until you've cooked all the chicken.
  7. Add tortillas to pan and heat them up, flipping as to not burn them. 
  8. Fill tortilla with chicken, add some fresh onion/cilantro, a squeeze of lime and douse it in any combination of salsas/hot sauces as you so please.
  9. Eat first few tacos hovering over stove/grill - multitasking eating the first few tacos while you are heating more.
  10. Think about how bad the Sabres are and cry.
