Stoner Posted December 26, 2015 Report Posted December 26, 2015 In thinking about MODO's panny more than I should, I am starting to think the size and placement of the butter dollop is important. If you look at N'eo's result, you can guess where the butter was placed. You can see the butter in JJ's as well, without the same result. Maybe the size of the butter tab is key. A big enough tab to create a well in the batter and set the stage for pannydemonium. Quote
JJFIVEOH Posted December 26, 2015 Report Posted December 26, 2015 I am going to try this tomorrow. JJ, I think half a cup of sugar is probably too much. He added two, uh, fingers. Also, 200 degrees celcius is about 390 fahrenheit, which is a pretty hot oven. Maybe your oven wasn't hot enough. In thinking about MODO's panny more than I should, I am starting to think the size and placement of the butter dollop is important. A big enough tab to create a well in the batter and set the stage for pannydemonium. I set the oven at 400°. The sugar is a good point, MODO did mention the sugar was only for the crusted top, maybe too much sugar made the surface too hard to break loose? The half cup was a rough estimate, but it was probably more than two large pinches now that I think about it. (I don't tend to conserve when it comes to sugar. ) I'll be interested to see how others make out. Quote
MODO Hockey Posted December 26, 2015 Author Report Posted December 26, 2015 (edited) Phat pannys round 2 incomming in about 30 mins.. :DAllright,4-6 eggs (i use 6 because i like the eggish taste of the panny)1 liter of milk, 3 % fat 1 teespoon of salt 1 or 2 normal spoons of sugar (do not use more sugar)5 decilitres of wheatmeal, wheatfloor, white color, used for baking bread etc. So,Put the oven on 400 degrees farenheit (200 celcius) and wait until the oven reaches this temp, and be sure to put the oven with heat from below and above, and do NOT use the actuall fan if u have one.Butter up the plate real good, all edges so the panny doest get stuck to the plate when finishedhttp://imgur.com/ARTbrOFFirst whip the eggs real good until it starts to be fluffy bubbles as on picturehttp://imgur.com/25ExqklAdd 1 liter of milk (3 % fat), and mix it together with the eggs, together with the salt and sugar, 20 seconds of whipping. After this, add 5 decilitres of wheatflour/wheatmeal, white, used for baking bread and shait. Dont add it all at once, take half and whip it good, then add the rest.Whip this real good, push the whipper to the edges and crush any flourlumbs, to make it real smooth.Put it in the lower part of the oven, not lowest, but otherwise the fluffy hills might reach the top of the oven.30 mins should do the trick, mine took 30 mins. You can add a couple of extra mins if you want more color to it,i like it as it is.The actuall Lingonberry jam isnt important eventhough its the most famous one beeing eaten to phat pannys here in Sweden. Raspberry jam works supernice, or whatever jam you like i believe. I tend to put on butter and let it melt over the panny when placed on my plate, and then pore some jam over it, that taste together with cold milk is lovley. Otherwize try whipcream/icecream or whatever you enjoy to pannys, kids love this stuff. Edited December 26, 2015 by MODO Hockey Quote

Stoner Posted December 26, 2015 Report Posted December 26, 2015 Now we know where MODO keeps the bodies. I think the butter on the bottom and sides of the pan will be important. The pancake has to be able to move, methinks, to get the spectacular result. Quote
SabresBillsFan Posted December 26, 2015 Report Posted December 26, 2015 I have to admit what a great post. Merry Christmas from Las Vegas which is surprisingly colder than Buffalo right now. Quote

spndnchz Posted December 26, 2015 Report Posted December 26, 2015 This is awesome! Awesome place too Mr Modo. Do we have ovens that heat top and bottom at the same time here? Quote
Stoner Posted December 26, 2015 Report Posted December 26, 2015 (edited) MODO's batter is in my oven! Nine minutes in, one corner is pulling away. I am excited. The butter has melted into little pools. I still think in those areas the batter won't rise as much, resulting in the lunar landscape. Stand by SabreSpace. Halfway through all four corners are lifted up, one corner has a big airy blister looking thing. Edited December 26, 2015 by pASabreFan Quote
Stoner Posted December 26, 2015 Report Posted December 26, 2015 (edited) A minute or two past the buzzer and all four corners are gorgeous, bubbled way up and golden brown. The middle is basically flat but maybe there's a hint of a few bubbles starting. I am going to give it more time. Edited December 26, 2015 by pASabreFan Quote

Stoner Posted December 26, 2015 Report Posted December 26, 2015 About 35 minutes in the middle started bubbling! But there was a breach on one side and it fell over the side and butter is burning on the bottom of the stove. Kitchen is smoky, smoke alarms apparently don't work, that's the good news. I am holding on tight hoping for a bigger bubble in the middle. The corners are really dark brown now. I think it's time. Godspeed. Quote

Stoner Posted December 26, 2015 Report Posted December 26, 2015 I swear my downstairs looks like the Aud during game 3 of the finals in 75! Faick! I had to take it out and turn the oven off, there was so much smoke. Finally the alarm went off. You never get the batteries out of those things. It would have been perfect if I could have left it in. Photos to come. Also, film at 11. Quote

Stoner Posted December 26, 2015 Report Posted December 26, 2015 (edited) It really is delicious. I held back on the white sugar to two tablespoons. I think we Americans always want to overdo it with the sweets. It came out very eggy. It's a great vehicle for whatever you top it with. I went with raspberry spread and Nutella. Fantastic. For those who are going to try it, it'll take longer than 30 minutes. More like at least 45. I was on my way to phanny nirvana until The Breach. Maybe I need a deeper pan. In all seriousness thanks for doing this MODO. It's one phat panny for man, one giant panny for U.S. Sweden relations! Edited December 26, 2015 by pASabreFan Quote

Stoner Posted December 26, 2015 Report Posted December 26, 2015 Yeah but what'll happen first... panny perfection or morbid obesity? (Actually, it's pretty modest calorie-wise. One good square of it is only about 250 calories. The toppings though. The toppings.) Hey MODO, what are the dimensions of your pan? How deep? Here's how I think it works. The corners lift up first, then the sides. But if the pan is too shallow, it starts to go over the edges, almost stretching out the middle, if that makes sense. I think you want it to expand against the side of the pan, so that the energy goes toward the middle of the panny, causing it to wrinkle, lift and bubble. Quote

I'd like to see we've take a crack at this. It's the Bermuda Triangle of recipes. I bet even he'd be reduced to tears, or smoke inhalation. This should be a thing. Someone posts a recipe and others try to make it. Quote
