That's obviously preferred, but when driving isn't an option… It's amazing how much more they change down here, delivered in those sealed plastic Chinese food containers as opposed to the cardboard box. That's how I feel when I read M/Y's posts. It's not natural, but it's sheer unbridled beauty. On that note....yes, the big wings are actually inferior and substituted in for specials at places. You get broken bones, and while more meat, not quite the taste. I love the chicken leg idea....in fact, I bake them Sicilian style with olive oil, s/p, the superfecta of Simon+Garfunkel spices, pecorino-romano cheese, and Italian breadcrumbs. The key is to douse them in olive oil so they sort of fry, cook them long and low, then zap them the last 15 minutes without foil. My official rule is that I will not eat anything that is labeled as a buffalo wing. It makes it very difficult. I'm pretty much stuck to just waiting until one of my two or three trips home each year. But now there is a decent chance that I won't be making those trip anymore. I miss the old days where there was a good wing place on every other corner. Hell we used to go to Elmos out there on Millersport Highway and they had really good wings. Favorite part of night classes was the after party we always had there. Good wings are not hard to make, so I don't get why places that sell good wings outside of buffalo are hard to find. Outside of Buffalo places get all nimbly bimbly with there wings and screw them up. Also Blanching wings kills them... I'm looking at you Duff's and Anchor bar. Maybe less if you can find a good place that does both in Rochester or Syracuse. As for wings, at one point I used to try the wings wherever I was; on travel, when I lived in Maryland, etc. After awhile I realized that I needed to one of two things: accept the wings for what they were or stop eating them. It seems like there's a analogy to this season in there somewhere. When I ended up doing (before I started eating better in general) was start ordering "Hot BBQ". By being BBQ based, my brain no longer jumped back to 25 years of learned behavior on what a wing should be, and instantly they were far more enjoyable. Turkey fryer rocks for this. I can make 20+ wings at a time in my turkey fryer. 360 degrees for ~12 minutes = crispy, delicious wings. Must do it outdoors though.
