Well, saffron would've been nice, but we are quarantined in upstate NY, pretty far from the closest saffron stash. I seasoned with salt, pepper, paprika, parsley, rosemary and a little garlic. The inferior substitute was splenda instead of sweet'n'low (not paella related). Quote
